Panetone Fit / Fit Panetone

Panetone Fit

Não é por causa das festas de fim de ano, que temos de jogar todo um sofrimento de um ano todo. E para isso temos que procurar sempre as opções mais saudáveis para todos nós. Por isso hoje deixo mais uma receitinha básica. Vale a tentativa,...gostoso e bom em todos os aspectos. Bjos gente,... Receitinha aí :
500 kg de farinha de trigo integral peneirada
250 de aveia em flocos grossos ( se quiser usar o farelo de aveia, o panetone fica mais fit ainda pelo aumento na concentração de fibras )
50 gramas de chia
3 ovos
Adoçante ou açúcar a gosto ( usei uma xícara de açúcar mascavo light )
1 pitada de sal
2 colheres de sopa  de manteiga,  margarina, óleo de coco ou óleo de milho ( a gosto, mas se não quiser usar também, sem problemas )
250 ml de leite desnatado morno
50 g de fermento biológico
300 g de nozes trituradas
250 g de uva passa (de preferência sem sementes)
20    l de essência de panetone (opcional)
raspas de 1 laranja
Como fazer ?
Deixe a chia com a aveia ou o farelo de aveia de molho em um pouco de água por algumas horas para que possam hidratar.
Bata no liquidificador os ovos, o adoçante ( açúcar ), a manteiga ( margarina ou óleo de sua preferência ), o leite morno, o fermento e a essência ( se optar por usar ), até que a mistura esteja homogênea. Em um recipiente grande, coloque a farinha de trigo integral, a chia e a aveia ( farelo )  abra um furo no centro e acrescente os ingredientes batidos
Amasse bem até que a massa se solte das mão ( caso seja necessário utilize mais farinha de trigo integral para sovar a massa ).
Em seguida, adicione as nozes, uvas passas, ameixa sem semente e raspas da laranja.
Distribua a massa nas porções q desejar. Coloque em um vasilhame coberto com um pano úmido em um local relativamente morno.
Utilizando o forno convencional em um dia frio ou à noite, procedo da seguinte maneira : ligo o forno por 1 minuto vazio. E logo em seguida coloco a porção da massa que vou deixar descansando em seu interior com a porta fechada por 25 a 30 minutos ou até observar que a massa dobrou de volume.  
Utilizando forno micro-ondas procedo da seguinte maneira : ligo o forno por 40 segundos vazio. E logo em seguida coloco a porção da massa que vou deixar descansando em seu interior com a porta fechada por 25 a 30 minutos. Deixe crescer até dobrar de volume
Dica de ouro : depois da massa crescida ela não pode ser picada. Ela cresce pelo acúmulo de gás carbônico proveniente da fermentação das bactérias presentes no fermento. Se a massa for cortada ou remodelada esse gás carbônico acumulado em seu interior irá se desprender e ela não irá crescer. Assim, ao colocar sua massa para descansar molde-a primeiro. Deixe-a no tamanho e formato que gostaria q ela assumisse depois de assada. Quanto menos ela for manipulada depois de crescer, melhor ela fica depois de assada.
Pré-aqueça o forno por 10 minutos.
Retire sua massa do descanso, pincele gemas batidas ( ou deixe para decorar depois de assada ) e leve para assar inicialmente por 10 minutos em fogo alto e mais 25 minutos em média em fogo baixo ou até dourar.
Espere esfriar para retirar do forno e decorar.
Pronto ,...está aí,...muito bom, saudável e para toda a família.

 Ingredients:
500 kg of sifted whole wheat flour, 250 oats (or oat bran), 50 grams of chia, 3 eggs, sweetener or sugar to taste, 1 pinch of salt, 2 tablespoons of coconut oil or corn oil , 250 ml of warm skimmed milk, 50 g of biological yeast, 300 g of crushed walnuts, 250 g of raisins, 20 ml of panettone essence (optional) and 1 orange zest.
How to make ?
Let the chia with the oats or the oat bran soak in a little water for a few hours so they can moisturize. Beat eggs, sweetener (sugar), butter (margarine or oil of your choice), warm milk, yeast and essence (if you choose to use) until the mixture is homogeneous. In a large bowl, place the whole wheat flour, chia and oats (bran) open a hole in the center and add the beaten ingredients
Knead well until the dough comes loose from the hands (if necessary use more whole wheat flour to dough the dough).
Then add the walnuts, raisins, prunes without seed and zest of the orange.
Distribute the dough in the portions you want. Place in a covered jar with a damp cloth in a relatively warm place.
Using the conventional oven on a cold day or at night, proceed as follows: I switch on the oven for 1 minute empty. And then I place the portion of the dough that I leave to rest in its interior with the door closed for 25 to 30 minutes or until I notice that the mass has doubled in volume.
Using a microwave oven I proceed as follows: I switch on the oven for 40 seconds empty. And then I put the portion of the dough that I leave to rest in its interior with the door closed for 25 to 30 minutes. Let it grow to double in volume
Gold Tip: After the mass has grown it can not be chopped. It grows by the accumulation of carbonic gas from the fermentation of the bacteria present in the yeast. If the mass is cut or remodeled, that carbon dioxide accumulated inside it will break loose and it will not grow. So, when putting your dough to rest, mold it first. Leave it in the size and shape you would like it to take on after roasting. The less it is handled after it has grown, the better it is after baking.
Preheat the oven for 10 minutes.
Remove the dough from the rest, pinch beaten egg yolks (or leave to decorate after roasting) and bake initially for 10 minutes over high heat and an additional 25 minutes on medium heat or until golden brown.
Wait cool to remove from the oven and decorate

Bolo de Cacau, Banana e Canela /  Cocoa, Banana and Cinnamon Cake







          Olá gente, ....então vamos para mais um receita ?
         Hoje é dia de bolo de novo. Todos sabem que eu amo bolo, que não resisto, que não posso ver que como tudo mesmo. E se for um bolo assim saudável então, aí é que não sobra nada mesmo. 
          Ingredientes 
                3 bananas picadas,
½  medida de aveia;
2 medidas de farinha de trigo integral;
4 a 6 colheres de sopa de adoçante ou açúcar de sua preferência;
Água filtrada em quantidade suficiente; 
4 claras ,
1 colher de sopa de chia,
2 colheres de sopa de linhaça dourada; 
2 colheres de sopa de canela em pó, 
cacau em pó a gosto
½ medida de óleo de milho, óleo de coco ou a manteiga mesmo, 
1 colher de sopa de fermento
Comece colocando a chia de molho em meia xícara de água de um dia para o outro dentro da geladeira para que ela hidrate. No outro dia coloque no liquidificador ou em um processador as claras, o óleo, o açúcar ou adoçante, 1 medida de água, bananas, canela, o cacau em pó e bata tudo até tornar a mistura homogênea. Despeje essa mistura em um vasilhame sobre a aveia e bata tudo até que todos os ingredientes estejam incorporados ( lembre-se que a aveia irá absorver a água e depois disso que você avaliará a quantidade final de água que dará a suavidade ideal ). Coloque a farinha integral, a chia hidratada e a farinha de linhaça e bata mais uma vez acrescentando a quantidade de água que for necessária para a massa ficar aerada ( com bolhas estourando ). Por último coloque uma colher de sopa de fermento e o misture a massa com uma colher. Leve ao forno para assar por uns 50 minutos, ou até o momento em que o bolo  estiver pronto. Retire do forno e espere esfriar para degustar ! 
Super fácil não é ? E super delícia também ....

Today is cake day again. Everyone knows that I love cake, that I can not resist, that I can not see it as everything. And if it is a cake so healthy then, there is nothing left.
Ingredients:
3 chopped bananas,
½ measure of oats;
2 measures of whole wheat flour;
4 to 6 tablespoons of sweetener or sugar of your choice;
Filtered water in sufficient quantity;
4 clear,
1 tablespoon chia,
2 tablespoons golden flaxseed;
2 tablespoons cinnamon powder,
Cocoa powder to taste
½ measure of corn oil, coconut oil or even butter,
1 teaspoon baking soup
Start by pouring the sauce into half a cup of water overnight in the refrigerator so it hydrate. The next day put in the blender or processor a whisk, oil, sugar or sweetener, 1 measure water, bananas, cinnamon, cocoa powder and beat everything until the mixture is homogeneous. Pour this mixture into a bowl over the oats and whisk until all ingredients are incorporated (remember that the oats will absorb the water and after that you will evaluate the final amount of water that will give the ideal smoothness). Put the whole flour, moist cream and flaxseed flour and beat again adding the amount of water that is necessary for the dough to be aerated (with bubbles bursting). Finally put a tablespoon of yeast and mix the dough with a spoon. Bake for about 50 minutes or until the cake is ready. Remove from oven and wait to cool to taste!
Super easy is not it? And super delicious too ....

Pessoal gostando né gente ! Pedindo receita aqui ...! Esse eu adoro e meus filhos também. Hora de criança comer bem sem ver.  Anotem aí essa delícia :
Ingredientes  para a massa :
½  medida de aveia;
2 medidas de farinha de trigo integral;
4 a 6 colheres de sopa de adoçante ou açúcar de sua preferência;
Água filtrada em quantidade suficiente;
4 claras ,
1 colher de sopa de chia,
2 colheres de sopa de linhaça dourada;
1 colher de sopa de fermento,
3 laranjas picadas ( retire aquela pelinha branca da laranja e ao cortá-la observe que não deve cortar o miolo, faça cortes em cruz perpendiculares retirando essa parte do miolo ) :
½ medida de óleo de milho ( tenho dado preferência para o óleo de milho por sua capacidade antioxidante, mas aqueles que preferirem o óleo de coco ou a manteiga mesmo, podem usar q dá certinho também )
Como fazer ?

Dica : A laranja quando batida com o bagaço pode deixar o bolo com um gosto meio amargo que desaparece aos poucos com os dias que o bolo está pronto. Vá avaliando seu gosto com relação a esse sabor amargo residual. Porém vale lembrar que o fato de fazer o bolo com o bagaço da laranja aumenta a quantidade de fibras no bolo, o que vale muito a pena. Caso ache que ele ficou muito amargo e que não satisfez seu paladar, utilize o suco ao invés das laranjas picadas.

Integral Orange Cake

     People like it, people! Requesting a recipe here ...! This one I love and my children, too. Child time to eat well without seeing. Write down this delight:
     Ingredients for the pasta:
½ measure of oats;
2 measures of whole wheat flour;
4 to 6 tablespoons of sweetener or sugar of your choice;
Filtered water in sufficient quantity;

1 tablespoon chia,
2 tablespoons golden flaxseed;
1 teaspoon baking soup,
3 chopped oranges (remove that white, orange peel, and when cutting it, note that it should not cut the kernels, make cross cuts perpendicular removing this part of the kernels):
½ measure of corn oil (I have given preference to corn oil because of its antioxidant capacity, but those who prefer coconut oil or even butter, can use it too)
     How to make ?

If you find that it has become very bitter and has not satisfied your taste, use the juice instead of chopped oranges.

Torta Fit de Maça, Canela e Gengibre / Fit Pie of Apple, Cinnamon and Ginger


Olá gente,...demoro né ,..mas volto ! Mãe, universitária ( de novo, rs ), dona de casa, empreendedora, ....tudo ao mesmo tempo é assim : vida louca 24 horas por dia. Naquela fase q “ dormir é para os fracos ”. Então vamos né, passar mais uma receitinha maravilhosa aí.

Torta Fit de Maça, Canela e Gengibre

Ingredientes para a massa :
1 medida de aveia 2 medidas de farinha integral,
1 medida de adoçante ( usar o de sua preferência – só observe que se for usar adoçante, use metade da medida para não ficar muito doce ),
3 ovos ( se preferir retire as gemas, mas como já disse antes as gemas possuem muitas vitaminas, vale a pena consumir e procurar retirar o colesterol em outras preparações ),
1 medida de água ( mas observe, que ao misturar a água com a aveia, essa irá absorver toda a água o que acaba aumentando a quantidade de água a ser utilizada ),
1 colher de sopa de fermento.
Ingredientes para o creme :
1 lata de leite condensado light ( pode comprar um pronto, mas se preferir faça o seu leite condensado light você mesma, deixando sua receita ainda mais light ),
1 medida de leite desnatado.
Ingredientes para a geleia de maça :
3 maças maduras de sua preferência,
Suco de 1 limão,
1 colher de sopa de canela,
Gengibre a gosto,
½ medida de água filtrada.
Como fazer ?
Coloque em um vasilhame a água, os ovos, aveia e o adoçante e mexa. Aguarde uns minutos para a aveia absorver os líquidos. Acrescente a farinha integral, mexa e adicione mais água se necessário. Bata bem a massa até que se comecem a estourar bolhas de ar ( sinal que a massa está bem aerada ). Acrescente o fermento e bata mais uma vez. Mantendo a massa aerada ! Unte um tabuleiro e leve ao forno até que a massa esteja assada. Reserve.
Caso queira fazer o leite condensado, coloque 1 medida de leite em pó desnatado de sua preferência, com adoçante a gosto e ¼  da medida de óleo de coco e 1 medida de água morna em um liquidificador e bata até que todos os ingredientes estejam incorporados a mistura. Leve a geladeira de um dia para o outro. Em caso do leite condensado ficar muito grosso, você pode adicionar água morna lentamente enquanto bate novamente no liquidificador ou colocar creme de leite light. Dos dois jeitos fica delicioso.
Essa receita de leite condensado fit é coringa aqui em casa. Uso para diversas coisas.
Utilizando do seu leite condensado light, ou do industrial mesmo, pegue uma medida do que optar e leve ao fogo com a mesma medida de leite misturando sempre, até virar um creme. Caso queira, coloque um pouco de amido de milho para engrossar. Separe o creme.
Leve ao fogo as maças raladas, com a canela, a água, o suco de limão e o gengibre até observar que a maça ficou transparente.
Pegue a massa integral assada, corte em pequenos discos e parta-os ao meio. Coloque em potinhos, molhe a massa com o excesso do caldo da geleia da maça ainda quente para que ele entre bem na massa, cubra com o creme de leite condensado e finalize com a geleia, canela polvilhada e folhas de hortelã.


Fit Pie of Apple, Cinnamon and Ginger

Ingredients for the pasta:
1 measure of oats 2 measures of whole meal,
1 measure of sweetener (use the one of your preference - just note that if you use sweetener, use half of the measure to not get too sweet),
3 eggs ,
1 measure of water (but note that when mixing water with oats, it will absorb all the water, which increases the amount of water to be used),
1 teaspoon baking soup.
Ingredients for the cream:
1 can condensed milk light (you can buy one ready, but if you prefer to make your milk condensed light yourself, leaving your recipe even lighter),
1 measure of skimmed milk.
Ingredients for apple jam:
3 ripe apples of your choice,
Juice of 1 lemon,
1 tablespoon cinnamon,
Ginger to taste,
½ measured filtered water.
How to make ?
     Put the water, eggs, oats and sweetener in a bowl and stir. Wait a few minutes for the oats to absorb the liquids. Add the whole flour, stir and add more water if necessary. Beat the dough well until air bubbles burst (sign that the dough is well aerated). Add the yeast and beat once more. Keeping the pasta aerated! Grease a pan and bake until the dough is roasted. Book it.
     If you want to make the condensed milk, place 1 measure of skim milk powder of your preference, with sweetener to taste and ¼ of the measure of coconut oil and 1 measure of warm water in a blender and beat until all the ingredients are incorporated into mixture. Take the refrigerator overnight. In case the condensed milk gets too thick, you can add warm water slowly while slamming back the blender or putting light cream. Either way, it's delicious.
     This fit condensed milk recipe is joking here at home. Use for several things.
     Using your light condensed milk, or even the industrial one, take a measure of what to choose and take to the fire with the same measure of milk mixing always, until turning a cream. If desired, add a little cornstarch to thicken.      Separate the cream.
     Bring to the fire the grated apples, cinnamon, water, lemon juice and ginger until you see that the apple has become transparent.
     Take the whole baked dough, cut into small disks and split them in half. Put into pots, soak the dough with the excess of the still hot jelly stock broth so that it comes in well in the batter, cover with the condensed cream and finish with the jelly, cinnamon sprinkled and mint leaves.

Bolo Funcional Zero Açúcar e Zero Lactose / Functional Cake Zero Sugar and Zero Lactose



     Hum,...amo bolo gente ! Deixo de comer qualquer coisa por uma fatia de bolo. Bolo para mim tem sabor de casa, família, irmãos, primos, férias, piscina, lanche da tarde....e lógico das brigas pela última fatia, do pedaço maior e tal, rs. 
     Agora imagina fazer com que todas essas lembranças estejam associadas a saúde, bem estar, vida saudável e alimentação saudável ? Não seria tudo de bom ? Então vamos perfumar nossa casa com esse bolo delicioso ?
     Receitinha : 
     Ingredientes 
1/2 kilo de banana nanica bem madura ( esse é o segredo desse bolo, quanto mais madura a banana estiver, mais doce ele vai ficar sem você sentir a necessidade de usar açúcar );
2 maças médias raladas
3 ovos ( se preferir pode não usar as gemas para diminuir o colesterol, mas lembrando também que a gema tem muitas vitaminas e sais minerais, as vezes compensa balancear aí na sua rotina e não retirar a gema );
1 copo de água potável;
1 colher de sopa de chia;
3 colheres de sopa de farinha de linhaça dourada;
200 gramas de aveia em flocos grandes;
1 colher de sopa de canela em pó;
500 gramas de farinha de trigo integral;
1 colher de sopa de fermento em pó;
6 castanhas do pará picadas.
     Como fazer ? 
     Coloque em uma vasilha a água, os ovos e a aveia. Espere um pouco para a aveia absorver a água. Acrescente a farinha integral, a de linhaça dourada, a canela e a chia. Bata até a massa ficar toda homogênea. Coloque a banana picada, as maças raladas com a casca e as incorpore a massa, batendo bem até que a massa fique bem oxigenada ( estourando bolhas ). Caso a massa esteja pesada, e por mais que você bata ela não solta essas bolhas, vá colocando mais água aos poucos e batendo até que elas surjam. Agora acrescente o fermento, e coloque para assar por uns 50 min. Ele demora um pouco mais para assar do que os demais, você vai observar. É só ficar de olho, porque isso varia de forno para forno também. Por isso faça o teste da faca ! Assado é só esperar esfriar e saborear,..ou se preferir quente também fica muito bom.

Recipe:
     Ingredients
1/2 kilo of very ripe banana nanica (this is the secret of this cake, the more mature the banana is, the sweeter it will be without you feeling the need to use sugar);
2 medium grated apples
3 eggs (if you prefer you can not use the yolks to lower your cholesterol, but remember also that the yolk has many vitamins and minerals, sometimes it pays to balance there in your routine and do not remove the yolk);
1 glass of drinking water;
1 tablespoon chia;
3 tablespoons of golden flaxseed flour;
200 grams of oats in large flakes;
1 tablespoon cinnamon powder;
500 grams of whole wheat flour;
1 tablespoon baking powder;
6 nuts of the chopped para.
     How to make ?
     Put water, eggs and oats in a bowl. Wait for the oatmeal to absorb the water. Add the whole flour, the golden flaxseed, the cinnamon and the chia. Beat until all the dough is homogeneous. Place the chopped banana, grated apples with the peel and incorporate the dough, beating well until the dough is well oxygenated (bursting bubbles). If the dough is heavy, and no matter how hard you hit it does not let go of those bubbles, go pouring more water and knocking until they emerge. Now add the yeast, and place to roast for about 50 min. It takes a little longer to roast than the others, you'll notice. Just keep an eye, because it varies from oven to oven too. So take the knife test! Roast is just waiting cool and savor, .. or if you prefer hot it also gets very good.

Manjar de Tapioca / Tapioca custard

    Sabe quando te dá aquela fissura por doce, assim depois do almoço ? Aí você está de dieta ? Então que tal experimentar fazer um manjar de tapioca ?
     As variações podem ser diversas. Basta você usar a sua imaginação ! Troque ou misture as frutas, faça um creme com cacau,....experimente ! 
     Ingredientes : 
     1/4 do pacote de tapioca para bolos ( aquela mais grossinha ), 1 litro de leite de coco, 1 pacote de coco ralado seco (  ou então para ficar mais saudável e fit ainda, compre o coco seco e rale ), adoçante da sua preferência a gosto, morangos, amoras e chia.
    Deixe a tapioca de molho no leite de coco por algumas horas. Você vera q a tapioca irá sugar todo leite de coco. Caso observe que fique seco, acrescente mais um pouco de leite de coco, até sobrar um " caldinho ". Leve ao fogo baixo por uns 20 minutos com o coco ralado e o adoçante. Prove para ver o gosto. Mexa até observar que o grão da tapioca está translúcido. Cuidado, não deixe de mexer para não grudar ou empelotar. 
    Observando que está pronto, desligue o fogo e reserve. Deixe esfriar.
    Coloque um pouco de água em uma panela com os morangos, amora e a chia e deixe cozinhar até q as frutas se desmanchem. Espere esfriar. 
    Distribua a tapioca em porções e sirva com a calda de frutas vermelhas e uns morangos picados por cima. Delicie-se  ! 
    Lembrando que a calda pode ser feita com qualquer fruta. E se quiser fazer com cacau pode ser também. É só colocar um pouco de adoçante em uma panela, deixar derreter e depois um pouco de água ( como se fosse uma calda de pudim mesmo ). Com a  calda de adoçante toda diluída e homogênea, agora acrescente um pouco de cacau em pó e mexa até ele diluir completamente. Refrigere e depois jogue por cima da tapioca com um pouco de cacau em pó e umas folhinhas de hortelã  para decorar
     Também fica um luxo !

     When did you get that fissure for candy, so after lunch? So you're on a diet? So how about trying out a tapioca delicacy?
     The variations can be diverse. Just use your imagination! Change or mix the fruits, make a cream with cocoa, .... try it!
     Ingredients:
     1/4 of the package of tapioca for cakes (that's the smallest), 1 liter of coconut milk, 1 packet of dry grated coconut (or else to stay healthier and fit still, buy the dried and dried coconut), sweetener Preference to taste, strawberries, blackberries and chia.
    Leave the tapioca sauce in the coconut milk for a few hours. You will see that the tapioca will suck all coconut milk. If you notice it is dry, add a little more coconut milk, until there is a "soup". Bring to low heat for about 20 minutes with grated coconut and sweetener. Taste to see the taste. Stir until you notice the tapioca grain is translucent. Caution, do not stop moving to avoid sticking or sticking.
    Watching it ready, turn off the heat and set aside. Let cool.
    Put some water in a pan with the strawberries, blackberry and the chia and cook until the fruits are disintegrated. Wait for it to cool down.
    Distribute the tapioca in portions and serve with the red fruit syrup and chopped strawberries on top. Enjoy yourself  !
    Remember that the syrup can be made with any fruit. And if you want to make it with cocoa can be too. Just put a little sweetener in a pan, let it melt and then some water (as if it were a pudding syrup itself). With the syrup of sweetener all diluted and homogenous, now add a little cocoa powder and stir until completely diluted. Refrigerate and then throw over the tapioca with a little cocoa powder and a few mint leaves to decorate
